Rustic omelettes with herbs and porcini mushrooms

Ingredients

5 fresh eggs
150 g gourmet porcini mushrooms in Serbosco sauce
30 Parmesan cheese
1 tablespoon chopped mixed herbs sage, rosemary, thyme
to taste salt and pepper
to taste butter or oil for greasing the muffin tin

Preparation

  1. Place the eggs in a large bowl.
  2. Add the salt and chopped herbs
  3. Mix with a hand whisk
  4. Add the Parmesan cheese and mix again
  5. Add the porcini mushrooms in gourmet sauce
  6. Mix again and finally pour into a muffin tin that has been previously greased with oil or butter
  7. Bake in a static oven at 180°C for about 20 minutes
  8. Remove from the oven and serve hot.

You can choose different herbs such as parsley, basil and marjoram.

If you wish, you can replace the mushrooms with Edam cheese and onions sautéed in butter.
