Rustic Omelettes with Herbs and Porcini


5 Fresh eggs
150 g porcini gourmet in salsa Serbosco
30 g Parmesan
1 Spoon of chopped sage, rosemary, thyme
to taste salt and pepper
enough Butter or oil to grease the mold


  1. Put the eggs in a capacious bowl.
  2. Add some salt and the chopped herbs.
  3. Mix with the hand whisk.
  4. Add the parmesan and whisk again.
  5. Add the Porcini Gourmet in salsa Serbosco.
  6. Mix again, then fill the molds previously greased with butter/eggs.
  7. Put everything in the oven at 180 C for about 20 minutes.
  8. Serve as soon as ready.

You could substitute the herbs with different ones like parsley, basil or marjoram.
